CACTUS CANYON is our first grenache harvest from 2021 after taking 10 years to get established in the sands.
This is a bright juicy wine with great acidity and fresh flavours. We pick at a moderate 13.3Be to highlight the aromatic intensity of grenache and explore the floral and spice spectrums of this variety.
We ferment in open fermenter with a soft extraction during its ten day ferment. We then press to a selection of 3-4 year old French hogsheads for the completion of malolactic fermentation and a further six month maturation before bottling.
A young wine in to bottle, CACTUS CANYON has plenty of juicy red fruits but also some great fine tannin to add length and complexity. The nose shows classic aromas of lavender, pomegranate, white pepper and fragrant black tea. With a beautiful balance of fruit and spice aromas, the palate has fantastic mid-palate volume for a lighter bodied wine and is packed full of flavours of raspberry, spiced cherries and wild thyme. Importantly this grenache still has some structure and minerality with a very fine ripple of tannin giving length and a salivating moreish quality.
"A mid-weighted, pulpy and jubilant grenache, with just enough tannic slake to confer a welcome savouriness; enough acidity to impart freshness. Simple gear of great charm. Red pastille, orange zest and campfire notes. Guzzle with a chill." - Ned Goodwin, Halliday Wine Companion
